India has one of the highest anaemia burdens in the world, and yet most anaemic patients I meet are already eating iron. The gap is absorption. Plant iron is poorly absorbed by default, and the standard Indian meal pattern, tea alongside food, curd everywhere, phytate rich grains, quietly suppresses it further. The fix is less about exotic foods and more about pairing and timing.

The pairing tricks that change everything

Add vitamin C to every iron meal. A squeeze of lemon on dal, amla in any form, tomatoes and capsicum in the sabzi: vitamin C can multiply non haem iron absorption. Move the chai. Tea and coffee tannins block iron uptake; keep them at least an hour from main meals. Do not swallow calcium with iron. Large curd servings and calcium tablets taken with an iron rich meal compete with absorption; separate them. Cook in iron kadhai occasionally. The effect is modest but real, particularly for acidic dishes like tomato based curries.

When food is not enough

Fatigue, breathlessness on stairs, pale nails, hair fall: if these are present, get a CBC and ferritin before self treating. Moderate anaemia usually needs prescribed supplementation, and B12 deficiency, rampant in vegetarian India, mimics iron deficiency but needs a completely different fix. Diet is the maintenance plan, not always the rescue plan.
